Hand Forged Nakiri with Spalted Birch Handle
This knife was hand forged by me in a forge I built, shaped with 2x72” belt grinder I built and handled with some spalted birch harvested from a tree that fell here on my property. The steel is high carbon 80CRV2 forging steel. This steel is designed to hold a great edge and be easy to sharpen.
A Nakiri like this is a traditional Japanese style knife primarily used for cutting vegetables. The blade is thin with a long secondary bevel and razor sharp edge.
