Extra large Nakiri with Spalted Birch handle
This may be thee larges blade I’ve made at just under 9” long. It would be great for those larger veggies and tasks, like parting out a cabbage or squash. The blade is thin to it’s light and can breeze through cuts. I love the handle from some of my favorite spalted birch.
This blade was forged from high carbon 80CRV2 steel. High carbon steels like this are the preferred by most serious chef’s though they do need a little more attention than does stainless. After use, they should be washed and dried so they don’t rust. Care instructions are included.
